Banana Bread
Ingredients

low-fat spread, for the tin, plus extra to serve

140g wholemeal flour

100g self-raising flour

1 tsp bicarbonate of soda

1 tsp baking powder

300g mashed banana from overripe black bananas

4 tbsp agave syrup

3 large eggs, beaten with a fork

25g chopped pecan or walnuts (optional)
Greek Yogurt with
Fruits & Seeds
Ingredients

6 oz nonfat plain Greek yogurt

1 tbsp honey, local preferred

1/2 cup fresh berries

1 tbsp chopped walnuts
Protein Pancakes
Ingredients

1 banana
-
75g oats
-
3 large eggs
-
2 tbsp milk (dairy, soya, oat or nut milks all work)

1 tbsp baking powder
-
pinch of cinnamon
-
2 tbsp protein powder (whey, pea or whatever your preference)

coconut oil, or a flavourless oil, for frying
-
nut butter, maple syrup and berries or sliced banana to serve
Fakeaway Egg Fried Rice with Chicken and Veggies
Ingredients

1 pack precooked brown rice

-
1 tbsp toasted sesame oil plus 1 tsp for cooking
-

3 spring onions, chopped
1 red pepper, diced1 green pepper, diced1 carrot, finely chopped
-
5 tbsp frozen peas, defrosted
3 tbsp soy sauce
2 eggs, beaten
-
Protein of choice ie prawns or chicken

Method
1. Heat a 1tsp sesame oil in a very hot frying pan and brown off the chicken for a few minutes, then add in spring onion, carrot, peas and diced peppers with a pinch pepper and toss for 2 minutes.
2. Add the cooked rice, 2-3 tbsp soy sauce, 1 tbsp sesame oil and toss to coat for a few seconds.
3. Make space to add in the beaten eggs and allow to set slightly, scramble then whisk into the rice.
4. Taste and season if needed with a little extra soy. Finish with some fresh spring onion and toasted sesame seeds. Bliss….
